Today's recipe comes from Joy, my best friend from the first day at Glenbard East High School. 1963! We met in Chorus and immediately bonded over our dislike for the teacher. Apparently the feeling was mutual, because before the first quarter was over, we were invited to leave due to our apparent lack of enthusiasm. That's when we discovered the fun and freedom of Study Hall. Joy's mom used to make these for us. They would be warm when we got to Joy's house after a hard day of being a Freshman...
Ingredients
1/4 cup butter
1 cup light brown sugar
1 egg
3/4 cup sifted flour (I never sift flour...do you?)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla (I double--love it!)
1/2 cup chopped nuts
Directions
1. Melt shortening and blend into brown sugar. Cool a bit, stir in egg, then dry ingredients
2. Add vanilla and nuts
3. Pour into 9-inch greased and floured square pan
4. Bake at 350 degrees for 20-25 minutes
5. Congratulate yourself for getting into Study Hall with the cute guys!
I might try this with maple syrup instead of sugar. Looks yummy!
