It's interesting where recipes come from. This one came from my (former) husband's grandmother. What a hoot this woman was! A card shark, with a wicked sense of humor. Her grandchildren called her "Nana." I adored her so much that when it was it time for my turn to be a grandmother, that I chose to be called "Nana," too.
But I'm getting ahead of myself. One time, during a visit to the "first" Nana--she was at least 80--she served Tater Tot Casserole. Crazy good! I have never stopped making it. It's easy, inexpensive, and reheats well...if there is any left. Great finger food for babies.
Once, when I started to date a chef, who fed me incredible dishes. I struggled to think what I would make for him. "How about Tater Tot Casserole?" suggested my daughter, half-jesting, half-sincere.
I make absolutely no claims to healthiness, although I have sometimes made it with soy crumbles instead of ground beef. I will just say that you won't be sorry you chose to try Nana's recipe.
Ingredients
1 pound lean ground beef, browned and drained
1 small onion, chopped
1 can green beans, drained
1 pound Tater Tots
1 can Golden Mushroom soup (NOT Cream of Mushroom!)
Directions
In an 8 or 9 inch square pan, layer:
1. ground beef
2. chopped onion
3. green beans
4. Tater Tots
5. Golden Mushroom soup
Bake at 350 degrees for 45-60 minutes, until the Tater Tots are browned.
Serves 2-4, depending on how hungry you are.
