It's a funny thing about food. A new dish emerges out of nowhere and becomes wildly popular. Then, it goes away. There was a time when you couldn't go to any function without finding Seven-Layer Salad. We all loved it! Then--Zap! It was gone. Until today...admit it, you miss this cool, tasty treat. There are generations who haven't had the pleasure of digging down to capture all seven layers. Don't deprive them! Forget about arugula, spinach, and spring mix. I never had a pretty, clear bowl like in the picture above. My Seven-Layer Salad was made in a Tupperware bowl or a baking pan. Didn't matter...it was delicious.
Ingredients
1 head iceberg lettuce, torn into pieces
1 cup celery, thinly sliced
1 cup green pepper, chopped
1 10-ounce package frozen peas, thawed
1 cup sweet (or red) onion, chopped
8-12 slices bacon, cooked crisp and crumbled
1 1/2 cups Mayonnaise
1/2 cup sour cream
3 Tablespoons sugar
1 8-ounce package shredded Cheddar cheese
Directions
In a big bowl or baking pan (at least 9 x 13 inches) layer salad in this order:
1. Lettuce
2. Celery
3. Green pepper
4. Peas
5. Onion
6. Bacon
7. Mix Mayonnaise with sour cream, and spread over the top, like cake icing
8. Sprinkle with sugar
9. Top with shredded cheese
10. Cover and refrigerate. Can be made a day ahead!
No questions, please, about the reasoning behind the specific order of the layers, or the purpose of three tablespoons of sugar. All I know is that it works and I don't want to mess with the magic.
